Basic Lamb Stew

Yummy basic Lamb Stew

Serves 4

Ingredients
± 800g lamb neck or lamb knuckle
1 onion, sliced thinly
3T grapeseed oil
Salt and pepper to taste
4 potatoes
Carrots or green beans

Method
1.  Heat the oil in a saucepan.
2.  Cook the onion until transparent.
3.  Add the meat, and brown the meat.
4.  Turn the heat onto the lowest setting.
5.  Cover the bottom of the saucepan with a thin layer of water.
6.  Place the lid on the saucepan and allow the meat to simmer.
7.  Peep into the pot every now and then.  If the water has cooked away, add a little more water.
8.  Slowly a thick, brown gravy will start to . 
9.  Allow the meat to cook for about 1 hour.
10. Peel the potatoes and add them to the stew - I cut them in half.
11. When the potatoes have been in for 30 minutes, add the carrots (I cut them into nice chunks) or beans.
12. Allow the vegetables to cook until soft, and all the flavours to mingle.  The stew will cook for about two hours in total.
