Blue Cheese, Apple and Walnut Pastries

Golden 

Preparation time 30 minutes
Baking time 20 minutes
Serves 8

Ingredients
1 packet ready-made puff pastry
2 Golden Delicious apples, peeled, cored and cut into slices
Butter
100ml apple juice
70g blue cheese
Walnuts or pecan nuts, chopped

Method
1. Preheat the oven to 200ºC.
2. Gently fry the apple slices in a little butter and apple juice for 10 minutes or until soft.
3. Mash half the apple with the blue cheese and nuts and set the remaining apple aside.
4. Using a cup, cut out 8 rounds of puff pastry and gently mould into a non-stick muffin tin.
5. The pastry does not need to be pressed all the way into the tin.
6. Spoon the apple and cheese mixture into the pastry and add the remaining slices of apple.
7. Bake for 20 minutes or until golden.
