Chicken Portions, on the Braai (barbecue)
My family's chicken portions done on the braai - here is the recipe for the sauce...
Ingredients
1 cup vinegar
3 onions, chopped
1 dessertspoon Worcester sauce
1 teaspoon paprika
1 teaspoon mustard powder
1 cup oil
1 dessertspoon tomato sauce
1 teaspoon salt
1 teaspoon Tabasco Sauce
Method
1. Pour all the ingredients into a saucepan, and cook for about 45 minutes.
2. clean the chicken portions.
3. Allow them to 'soak' in the sauce for about 24 hours.
4. Par-cook them for about 15 minutes before placing them on the hot coals.
Tip: they will scorch due to the sugar in ingredients like the tomato sauce, so cook them on a lower heat for a little longer.
