Fried Bananas with Caramel Syrup
Delicious with toasted raisin bread.
Serves 3-4
Ingredients
Sauce:
180ml (¾ cup) water
200ml Castor sugar
Juice and finely grated rind of 1 lemon
2ml (¾ teaspoon) ground cinnamon
Bananas:
4 large, firm bananas, peeled
About 40ml butter
15ml (1 tablespoon) brown sugar
Juice and rind of 1 orange
Method
Sauce:
1. Slowly heat the water and caster sugar until the sugar has dissolved.
2. Bring to the boil and simmer until reduced by half.
3. Add half the lemon juice and the cinnamon and set aside.
Bananas:
4. Slice each banana into 3 diagonal slices.
5. Melt the butter in a large pan over low heat and fry the bananas until golden brown.
6. Sprinkle with brown sugar, shaking the pan gently until the sugar has melted (about 1 minute).
7. Add the orange juice and rind and the remaining lemon juice. Heat for 1 minute.
8. Add the syrup to the pan and bring to the boil. Remove immediately.
9. Serve on toasted raisin bread.
