Pan-fried Norwegian Salmon on a bed of Pasta
Ingredients
Hot-smoked salmon - flaked (not too small)
Dill - finely chopped
Spring onions - finely chopped
Crème fraîche
Olive oil
Freshly ground black pepper
Pasta of your choice - long works best
Fresh fillet of Norwegian Salmon
A wedge of lemon
Method
1. Start by cooking the pasta.
2. At the same time, heat your pan for the salmon fillet. We like it seared, but you can prepare it in whatever degree of 'doneness'. Start cooking on the side that will show upwards and try to turn only once.
3. When the pasta is done, drain and toss with olive oil, then add smoked salmon, spring onions, dill and crème fraîche.
4. Serve a twirl on the plate, topped with the salmon fillet, a blob of crème fraîche and a sprig of dill, the lemon, and some freshly ground black pepper.
