Roly Poly in a Pot (on the coals)
Serves 6
Ingredients
4x250ml (4 cups) cake flour
10ml (2 teaspoons) baking powder
125g butter
2 eggs, whisked
125ml (½ cup) milk
smooth apricot jam
25ml (5 teaspoons) brandy
Sauce:
50ml brandy
1 litre (4 cups) boiling water
500ml (2 cups) sugar
60 ml (¼ cup) butter
Method
1. Sift the cake flour and baking powder together and rub in the butter.
2. Add the eggs, followed by the milk and mix to form a stiff dough.
3. Roll out thinly on a floured surface and spread with the apricot jam.
4. Roll up and slice.
5. Mix all the ingredients for the sauce and pour into a well greased flat-bottomed black pot.
6. Arrange the dough slices on the bottom of the pot.
7. Cover with lid and bake for 45 minutes on a stand over slow coals (arrange more coals on the lid and fewer underneath the pot).
8. Replace the burnt-out coals on the lid with fresh coals if necessary.
9. Serve with custard.
