Ingredients
1 cup bulgar wheat
1 tomato
2 lemons
Salt and pepper
¼ cup olive oil
2 cans tuna
½ cup chopped fresh parsley
85ml chopped red onion

Method
1. In a large bowl, combine the bulgar and 2 cups boiling water and let stand until softened, 30-40 minutes.
2. Drain, squeeze, dry and chill.
3. Meanwhile, dice the tomato.
4. Grate ½ teaspoon of the yellow zest from the lemons and squeeze ¼ cup juice.
5. In a small jar, combine lemon juice, ¾ teaspoon salt and ¼ teaspoon pepper and shake until the salt dissolves.
6. Add oil and shake again to combine.
7. Drain tuna and flake.
8. Combine bulgar, tomato, lemon zest, parsley, onion and dressing.
9. Add the tuna and mix until just combined.
10. Serve on lettuce leaves.
