OK, so in my latest newsletter I promised to report back on my ABBA moment...(read more on my newsletter.) All I can say is that, in the end I bribed a couple of people to act as background singers, and we were an absolute hit! Move over Agnetha, Frida, Bjorn and Benny, 'cause Sophia's in the house!
In the meanwhile, I thought I'd share this very easy dessert recipe with you...
Use at least two halves per person
Ingredients
A few cans of preserved pear halves
Butter
Treacle sugar
Dessert wine or Brandy
Method
1. Pre-heat the oven to 180°C.
2. Rub butter on the base of an oven-proof dish.
3. Drain the pears, but set some of the juice aside.
4. Pack the pear halves with the hollow showing upward, tightly together in the dish.
5. Put a blob of butter into every hollow.
6. Drizzle with the dessert wine or brandy, and some of the juice.
7. Sprinkle with treacle sugar - don't be too shy.
8. Place the dish in the oven and allow to bake for about 90 minutes. Make sure it doesn't dry out. If it should, you can add some juice or dessert wine.
Serve with a blob of double thick cream. Yum!!
