Banana Loaf recipe - remember not to freak out when it cracks on top...
Ingredients
125ml (½ cup) butter
250ml (1 cup) sugar
2 eggs
500ml (2 cups) cake flour
10ml (2 teaspoons) baking powder
4 to 6 overripe bananas
5ml (1 teaspoon) vanilla essence
2,5ml (½ teaspoon) salt
Method
1. Preheat the oven to 180°C.
2. Beat the butter and sugar until creamy. Add the vanilla essence.
3. Add the eggs, one at a time, and beat well after each egg.
4. Sift the dry ingredients and add to the mixture.
5. Use a fork to mash the bananas, and add to the mixture.
6. Mix everything together well, and pour into a small bread tin that has been basted.
7. Bake for 1 hour.
8. Allow to cool slightly before you tip out of the tin.
A banana loaf gets better with time, so leave it for a day or two before you dig in...
