Sophia's Right-brain Chicken Creation
Serves 4
Ingredients
Grapeseed oil to fry in
1 medium-sized onion, sliced
1 chorizo sausage, sliced thinly
600g mini chicken breasts
125ml double thick cream
1 heaped teaspoon basil pesto
Method
1. Slice the onion and fry in oil until transparent.
2. Add the chicken breasts and fry until the start to brown.
3. Mix the pesto into the cream, and add to the chicken.
4. Allow to cook for a few minutes, and then add the chorizo.
5. Let it simmer for about 10 minutes.
Serve on a bed of basmati rice, and sprinkle with chopped parsley. Pair with a Gewurztraminer. We had Paul Cluver's limited release that is marketed by Woolworths.
Variation - if you chopped the chicken into smaller bits, you could successfully serve this with pasta like spaghetti or capellini.
