Ingredients
1 whole egg
5 egg yolks
100g castor sugar
375ml cream
125ml milk
1 vanilla pod, halved
Method
1. Preheat the oven to 130°C.
2. Beat the first three ingredients together until the mixture turns into a pale yellow colour.
3. Slowly bring this mixture to a gentle boil.
4. Remove from the heat and, using a metal spoon, slowly add the hot mixture to the egg mixture, stirring all the time.
5. Pour this back into the pot, and onto the stove at a medium to low heat.
6. Stir the mixture with a metal spoon until it coats the back of the spoon - 10 to 15 minutes.
7. Remove the vanilla pod.
8. Pour into shallow ramekins.
9. Place in a bain-marie, and into the preheated oven for 20 minutes.
10. Allow to cool to room temperature.
11. Place in the fridge until needed.
12. Sprinkle with a thin layer of white sugar.
13. Use a blowtorch to caramelise the top.
