Rich Baked Eggs with Smoked Trout
This is fabulous served at breakfast, brunch or lunch - you won't believe a dish so simple is this delicious!
Serves 4
Ingredients
200g smoked trout
4 eggs
15ml snipped chives
120ml fresh cream
Toast fingers to serve
Method
1. Lightly grease 4 ramekin dishes with non-stick spray.
2. Line each dish with smoked trout.
3. Break an egg into each dish, sprinkle with chives and seasoning.
4. Divide the cream between the four dishes.
5. Steam the eggs until cooked to your liking, about 8 minutes for a softish yolk.
6. Turn the eggs out onto serving plates and serve with toast fingers.
This looks and tastes great! You can use a blob of crème fraîshe and a sprig of fresh dill to complete the picture...
