Ingredients
250ml cake flour
10ml baking powder
30ml sugar
1 egg, lightly beaten
150ml milk
butter, for brushing the pan
250ml fresh berries, such as raspberries, strawberries, gooseberries and blueberries
125ml crème fraîche
125ml honey
Icing sugar, for dusting
Method
1. Sift the flour, baking powder and sugar into a bowl.
2. Add the egg and milk and whisk until smooth.
3. Heat a large frying pan and brush it with a little butter.
4. Spoon tablespoons of the batter into the pan and cook for about 2 minutes until bubbles appear on the surface.
5. Turn the flapjacks over and cook for another 30 seconds until they're done.
6. Serve the flapjacks hot with fresh berries, a dollop of crème fraîche, a good drizzle of honey and a dusting of good icing sugar.
