Makes ± 60 biscuits
Use hard cheese. Add rosemary (or thyme) to dough as extra.
Ingredients
600g flour
5ml salt
5ml baking powder
210g butter, cut into cubes
500ml milk
200g Gruyère, grated
Method
1. Sift dry ingredients together.
2. Rub in butter till the mixture looks like breadcrumbs.
3. Add the milk, cheese and rosemary. Mix to form a dough.
4. Turn onto a floured surface and knead, (don't knead too much).
5. Cut dough in half and form each into a ball and roll into a log.
6. Roll each inside a sheet of greaseproof paper and close at ends. Place in fridge for 1 hour.
7. Preheat oven to 180ºC. Remove dough from fridge. Cut into 5mm thick rounds.
8. Place on baking tray lined with baking paper.
9. Bake 20 -25 minutes until golden brown.
10. Cool completely and store in an airtight container.
