Method
1. Take a variety of root vegetables like potatoes, sweet potatoes, beetroot, parsnips, turnips and carrots, and use a potato peeler or mandolin to carve slivers.
2. Heat vegetable oil in a fryer or deep pan until a cube of bread turns golden within 30 seconds - the oil i snow hot enough.
3. Fry the slivers in small batches for 1 minute or until crisp and golden.
4. Drain on kitchen paper.
5. Toss with salt and freshly ground black pepper.
