Suggested wine as accompaniment - Michael's Vineyard Sauvignon Blanc
Ingredients
Fresh spinach
7 sheets of lasagne
Grapeseed oil
A can of whole Italian tomatoes (from Woolworths)
2 packets ready-made cheese sauce (also from Woolworths)
A packet of Parma ham
Feta cheese
Freshly grated nutmeg
2t sugar
Salt and freshly ground black pepper to taste
A sprig of rosemary to serve
Method
1. Pre-heat the oven to 180°C.
2. Steam the spinach for 15 minutes.
3. In a pot filled with boiling salted water, cook the sheets of lasagne for about 7 minutes (they must still be al dente), being careful that they don't stick to one another.
4. Oil them on both sides lightly.
5. Place one sheet on the plate. Top with spinach, nutmeg and cheese sauce, with a dash of salt.
6. Then top that with another sheet. Now add the Parma ham and crumble a wheel of feta over that.
7. Top with another sheet, the canned tomatoes, roughly chopped, and sprinkle with sugar.
8. Add some cheese sauce and more feta, and tear the last sheet into strips to top your creation with.
9. Sprinkle with more feta and bake for about 15 - 20 minutes.
10. Grill for a few minutes until brown on top. (The edges of the pasta go brown and crispy - yum!)
