The word “mealie” is our South African word for ‘maize' or 'corn’. This recipe was given to me by a cousin, and is quick and easy to prepare.
Ingredients
8 baby marrows (courgettes), grated
3 eggs
1 cup flour
15ml baking powder
3ml salt
Freshly ground black pepper to taste
1 cup grated cheddar cheese
½ cup Canola oil
1 large onion, grated
410ml sugar mealies (non-cream)
Method
1. Preheat the oven to 180ºC.
2. Mix everything in a bowl.
3. Grease pan and spoon in the mixture.
4. Bake for approximately 1 hour. (You can check after 45 minutes…)
Enjoy with a ‘braai’ (barbecue) or with breakfast.
