Ingredients
A few sheets of spinach lasagne, broken into biggish pieces
Salted water to cook it in
Grapeseed or olive oil
Fresh porcini, cut into big chunks
Butter to fry them in
Garlic, crushed, to flavour
Shavings of Parmesan
Freshly ground black pepper
Method
1. Cook the pasta in the salted boiling water until cooked.
2. In the meanwhile, heat the butter in a pan, and fry the porcini until brown. Add a clove of garlic and heat through.
3. As soon as the pasta is done, drain and place back in the pot. Add oil to lubricate, and a clove of garlic.
4. To assemble: mix the porcini into the pasta, but leave some for the top. Add Parmesan shavings, drizzle with olive oil, and sprinkle with black pepper.
