Ingredients
500g firm, unblemished strawberries, hulled, rinsed and drained
¼ cup strained lemon juice
1½ cups sugar
Method
1. Place strawberries in a very large micro-proof bowl.
2. Pour over lemon juice.
3. Microwave uncovered on high for 3 minutes or until the fruit is soft.
4. Add sugar and stir well.
5. Microwave uncovered on high for 15 minutes, stirring once or twice, until the syrup is thick enough to set. (To test for setting, place a spoonful in a chilled ramekin in the freezer for a few minutes; it should crinkle when pushed along with a finger.)
6. Allow jam to cool for half an hour before spooning into a clean, warmed jam jars.
7. Pour a film of brandy over before closing.
