Ingredients
One roll of pre-made puff pastry
4 Sweet potatoes
About 15 Rosa tomatoes
2 cloves of garlic, crushed
Fresh rosemary leaves
Grapeseed oil to roast the sweet potatoes
Yellow sugar
An egg to brush the pastry
Method
1. Preheat the oven to 180°C.
2. Peel the sweet potatoes and cut them into chunks.
3. Roast until cooked.
4. Add the tomatoes whole, the garlic and the rosemary and sprinkle with yellow sugar.
5. Roll out the puff pastry and cover the dish with the pastry.
6. Brush with the beaten egg.
7. Bake until the pastry has turned a golden brown colour.
8. Tip upside down onto a plate and serve hot.
