Ready-made puff pastry
Butter
Roma tomatoes
Treacle sugar
Double thick fresh cream
Method
1. First of all, preheat the oven to 200°C.
2. You can buy ready-made puff pastry or make your own.
3. Roll the pastry out to a thickness of about 3 to 4mm and cut out round circles.
4. Brush lightly with melted butter.
5. Then take whole Roma tomatoes, cut a cross in the skin on the bottom of the tomato, and then place them in a dish and cover with hot water.
6. Leave them for about five minutes, and you will see the skin start to burst open and pull away. Now it is easy to pull it off.
7. Cut each tomato in half, scoop out the pips, and place them upside down, one leaning against the other, on the pastry.
8. Sprinkle with treacle sugar, add a blob of double thick cream, and pop into the oven until the pastry is lightly brown.
9. When serving the dish, add some wild rocket, a dash of freshly ground black pepper, and serve immediately.
