Serves 4
Ingredients
700g seedless watermelon (about ¼), peeled and thinly sliced
250g Greek feta, thinly sliced (you can get this at Giovanni's in Green Point)
1 Spanish or red onion, halved and thinly sliced
⅓ cup extra virgin olive oil
2 tablespoons red wine vinegar
Method
1. Divide the watermelon slices among the plates.
2. Top with feta and onions.
3. Drizzle with olive oil and vinegar and season to taste with freshly ground black pepper.
4. Serve immediately.
